Low carb lunch

People have become more health conscious as a result restaurants and cafes have introduced a line up of healthy meals which are low in carb or made out of an alternative ingredient to make it healthy.

A few alternative ingredients I use-

Brown rice
Whole wheat pasta
Red rice flour
Kurakkan flour

Ideas –
Make buriyani out of brown basmathi rice.
Add a few whole wheat pastas for your salad.
Make pittu using red raw rice flour.
You can make rotti using kurakkan flour.

Recipe for a low carb salad –
Ingredients
1 cup shredded chicken (boiled)
Half a carrot (thinly julienned)
1 cup Shredded cabbage
A handful of peas
Half a tomato chopped
1 teaspoon fresh olive
1 teaspoon olive oil
Salt to taste
Pepper as required
*Use low fat low salt feta cheese and avoid the salt
*lettuce leaf to serve

method

Mix all ingredients except feta cheese together gently coating with olive oil.
Spread over a large lettuce leaf.
Sprinkle the feta on top and enjoy.

Ideas to make it with 25%carb

1) Add a few croutons.
2) Wrap it on a thin whoke wheat rotti.
3) sandwich it between two slices of multigrain bread.
4) serve with 1/2 a cup of brown rice.
